Going Rustic: Garlic Spinach Pizza

If I had to pick one thing that I would eat every day, this might be it. Seriously, I love this pizza! I mean, it's LOADED with garlic - need I say more? You can easily add whatever veggies you have on hand, then top with mozz. Easy as pie...pizza pie! This is a perfect weeknight meal as it's quick to pull together and doesn't take long to bake.

If you're an overachiever, feel free to make your own dough, but I find a prepared crust is blessedly a much quicker option after a long day. The ONLY prepared crust I'll use is by Rustic Crust because it tastes great and uses quality ingredients. The Ciabatta is my favorite but it can be hard to find in my area. I also like the Tuscan Six Grain and Originale, but really all the crusts I've tried are great. They even have gluten free, which I haven't had but have heard that it's good.

If you're feeling lazy and want a pizza but don't want to cook, even with this fast and easy recipe, try an American Flatbread. Made by the same people who make Rustic Crust, these flat pies bake in just about 7 minutes so you can fill your belly on the double! And no, I don't receive payment for touting these brands - I just really like them!

INGREDIENTS

1 flatbread pizza crust

6-8 garlic cloves, minced

1/4 C olive oil

1/4-1/2 t salt

1 C fresh spinach, chopped

8-10 cherry tomatoes, sliced in half

2 artichoke hearts (from can), chopped

1/2 C feta cheese

1 C mozzarella cheese

DIRECTIONS

Preheat oven to 450 F.

Place minced garlic in a small bowl; mix with olive oil and salt to taste. Pour onto pizza crust and spread evenly.

Top with feta, tomatoes, artichoke hearts and spinach. Use whatever amount of these items you'd like or feel free to remove ones that you don't have or don't like. You could add other veggies, such as mushrooms or peppers, if you wish. There is a lot of flexibility to make this pizza how you like it. If you want an extra kick, add a sprinkle of red pepper flakes!

Top with mozzarella and place in oven directly on the rack. After closing the oven door, lower temperature to 425 F. Bake for approximately 10 to 12 minutes.
